  • Summer Eats

    This summer I've tried to cook simple, healthy recipes that don't use the oven too often.  I'm sure many of you out there try to do the same.  Anyways, I love talkin' food so here are some of my favorites this summer.

    Paninis on the George Foreman Grill

    -We've done several combos of meats and cheeses, one of my favorites is turkey with blue cheese

    Salads

    -Italian style salad with lots of veges and turkey pepperoni for protein

    -Mexican style with black beans for protein and a lime vinegarette

    -Tuna salad made with yogurt instead of mayo served on a whole grain pitta

    Also, here is a recipe that someone made me after Evan was born.  Since then, I've made it a lot.  It is so fast and yummy.  Grace loves it too!  I just use the reduced fat version of Alfredo sauce in a jar to try to make it a little healthier.

    Cheesy Ham Tortellini

    This doesn't look that impressive, but it taste oh so yummy!!  I especially like that you can use frozen chicken which makes it even easier to throw together.  I usually serve mine with a Spanish style rice. 

    Salsa Chicken in the Crockpot
    4-6 chicken breasts {fresh or frozen}
    1 can of black beans {drained}
    1 can corn {drained} 
    1 jar of salsa
    1 block of cream cheese {optional}

    Combine
    all ingredients except the cream cheese in the crockpot. Cook on Low
    for 4-6 hrs, shredding the chicken while cooking (also optional!) Add
    the cream cheese a half hour before done. Serve w. tortilla chips, in flour tortillas or over rice. Enjoy!

    Here is a recipe that I love.  It isn't very kid-friendly, but it is really fast, healthy and doesn't require much oven time


    Pita Pizzas:
    2 flat whole wheat pitas2 T. olive oil1 T. vinegar1 t. basil1 t. oregano1 garlic clove, crushed/choppedchopped spinachsliced tomatoesblack olivesparmesan cheesefeta cheese
    Brush pitas with 1 T. olive oil and place in the oven on broil for a few minutes until slightly crispy.  Combine other T. of olive oil, vinegar, basil, oregano, and garlic in a bowl.  Take pitas out and spread mixture on top.  Chop spinach, slice tomatoes (I prefer roma and one on each pita, but use whatever you prefer) and olives.  Place veggies on top of pitas.  Top with feta and parmesan cheese.  Return to oven for a few minutes until parmesan is melted.  Take out of oven and use a pizza cutter to cut into four small pieces.  These pitas are really yummy.  You can vary the veggies if you like.  I really like garlic and feta, so I often add more than the recipe calls for.   Hope you enjoy it!!
